Dr. John Zachar’s Applesauce Cookie Recipe:
Ingredients:
1 stick of butter
1 cup of sugar
1 egg
1 cup applesauce
1 tsp. cinnamon
1 tsp. nutmeg
2 cups flour
1 tsp. baking soda
½ cup coconut
½ cup chopped nuts (your choice of almonds, walnuts or pecans)
Cream butter and sugar. I just mix by hand with a spatula. If the butter is hard, soften it by zapping it in the microwave for 30 seconds or so.
Add egg and keep mixing. Add applesauce and keep mixing.
Add the cinnamon and nutmeg (measurements are approximate depending on taste) and mix.
Now stir in flour, baking soda, coconut and chopped nuts.
The final mixture should be about the consistency of toothpaste. If it’s too runny, add more flour.
Dip teaspoons full of the batter onto a cookie sheet and bake at 350°F for about 15 minutes, or until golden brown.
